Rock Maple Sugar

Maple Sugar, the old way.

Pure NY Wood Maple Syrup

Sugaring

Years ago I remember taping trees with wood spouts. We would cut a branch from the same tree and widdle out the middle.. taping was easy.. hand drill a hole and push the spout in and hang a wooden bucket. We tried to speed up the process by creating fires at the base of a tree which would force the tree to move sap from the ground. I remember running cordage and sap would always follow that down hill.. it's insane where it all went. That went from wood to metal.. from metal to copper.. from copper to plastic and who knows what it will be next.

I always told myself, everything you ever need is right in the forest. I started to collect sap with wood buckets and then that sap would go into 100gallon wood kegs. With the right set of tools you can make syrup the right way. Don't get me wrong.. it's labor but whats it taste like.. guess you'll have to find out!

We currently are boiling from a high quality stainless steel pan but our goal is to stay away from plastics. I believe there is impurity and the less we can add the higher quality product overall.
